Great for a midweek meal, this flavorful feast is ready in minutes. Pro-tip: read through all the directions first. There are a few moments of downtime you can use for multitasking the rest of your dish.
2 teaspoons unsalted poultry seasoning
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon ground allspice
1/4 teaspoon ground red pepper
1/4 teaspoon black pepper
1 pound chicken breast, cubed
1 Tablespoon olive oil
1/4 cup water
1/4 cup white wine (or extra water or homemade chicken broth)
1 Tablespoon lemon juice
1/8 teaspoon salt
1 Tablespoon orange marmalade
Combine first 7 ingredients in a small bowl, stir well.
Rub chicken with spice mixture (just toss it in the bowl), let sit 5 minutes.
Heat oil in a skillet, add chicken, and lightly brown (just a minute or so).
Add water and wine.
Cover, reduce heat, and simmer 6 minutes or until chicken is cooked through.
Add lemon juice, and 1/8 teaspoon salt to skillet, bring to boil, and simmer until reduced about 4 minutes.
Stir in marmalade and add chicken back.
Serve over rice.
