Rosemary Garlic Roasted Potatoes

A classic side that pairs with just about everything (contributed by Amanda F. of Ohio).

With only six ingredients (including the spices!), and just a few minutes of preparation required, the hardest part will be resisting eating them all before plating the rest of the meal.


In Amanda's own words:

"Use the leftovers to make a 'hash' with grilled chicken and sautéed bell peppers, onions, and mushrooms."

Ingredients:

  • 4-6 potatoes, peeled and chopped into 1-inch cubes

  • 3 cloves garlic, chopped finely

  • 1/4 cup olive oil

  • 1 tablespoon rosemary

  • Salt and pepper to taste


Directions:

  1. Preheat oven to 400ºF.

  2. Peel and chop potatoes and garlic.

  3. Add all ingredients to a large Ziplock bag and toss to coat evenly.

  4. Spread potatoes in a single layer on a large cookie sheet.

  5. Bake at 400ºF for about 30 minutes, or until potatoes are lightly browned and tender. It helps to stir them once or twice while baking so they cook evenly.
