Fruited Pork Chops

These easy-to-make pork chops are full of flavor and zest—a surefire way to make the tender pork chops you’ve been craving. (Contributed by the Light of Life Foundation.)

Whether the holidays are near or you’re motivated to try a new recipe, it’s time to spice things up! The fruity flavor profile of these tender pork chops makes it simple to make a wholesome, comforting home-cooked meal your family is sure to love.


Ingredients:

  • 2 pork shoulder or loin chops (6 ounces each)

  • ½ cup thinly sliced carrot

  • 1/3 cup unfermented apple cider (no sugar added)

  • ¼ cup sliced onion

  • ½ small mango, pared, pitted, and diced

  • ½ small apple, cored and diced

  • 1 cup cooked long-grain rice (hot)

  • Italian (flat-leaf) parsley sprigs

Directions:

  1. On rack in broiling pan, broil pork chops 5 inches from heat source, turning once, until rare (2-3 minutes each side)

  2. Remove from broiler and set aside

  3. Preheat oven to 350 degrees F

  4. In an 8 x 8 x 2 inch baking dish, combine carrot, cider, onion, mango, and apple

  5. Place seared pork chops on top of mixture, cover and bake until pork chops are fork tender and vegetables are thoroughly cooked (30-40 minutes)

  6. Serve over hot rice and garnish with parsley
