Chicken with Orange Pesto
Give your chicken dinner a unique twist.

This zesty spin on chicken might be a new family favorite.
6 chicken breast halves, with skin and bone (about 3 pounds)
1/2 cup fresh basil leaves
2 tablespoons grated orange peel
2 garlic cloves
2 teaspoons olive oil
3 tablespoons orange juice
In a food processor, combine basil, orange peel and garlic.
Cover and process until finely chopped.
Add olive oil, orange juice, and pepper to taste; process a few seconds or until a paste is formed.
Lightly spread equal portions of the basil mixture under the skin and on the bone side of each chicken breast.
Place the chicken, skin-side down, on broiler pan. Broil the chicken 4 inches from the heat source for 10 minutes.
Turn the chicken over and broil 10 to 12 minutes longer, or until the chicken is cooked thoroughly. (If the chicken begins to brown too quickly, cover the area with aluminum foil.)
