Banana Nut Bread

This low-iodine version of the ultimate fall favorite, banana nut bread, ranks among the best. (Contributed by Stephanie W.)

Of all of the recipes shared from ThyCa's Low-Iodine Cookbook, Stephanie's banana nut bread has ranked #1 on ThyCa's Pinterest page for some time now. No doubt this fall treat will become an all-time favorite among your family and friends as well.


Ingredients:

  • 2 egg whites

  • 1/2 cup canola oil

  • 3/4 cup sugar

  • 1 teaspoon vanilla

  • 1/4 cup applesauce

  • 1 1/2 cups flour

  • 1/2 teaspoon baking powder

  • 1 teaspoon cinnamon

  • 1/2 cup chopped walnuts

  • 2 large ripe bananas, mashed


Directions:

  1. Heat oven to 375 degrees F

  2. Mix eggs, oil, sugar, vanilla, and applesauce with a spoon

  3. Stir in dry ingredients

  4. Add bananas and chopped walnuts

  5. Stir until well mixed

  6. Bake in loaf pan at 375 degrees F until done (50-60 minutes)
