Banana-Blueberry Cake

Sweet but not *too sweet*, this dessert is easy to bake and a delight to eat

With nutritious fruit in every bite, you can have your cake and eat it too.


In Kathy's own words:

"This started off as a banana bread—was altered to a cake, and then I improvised for the low-iodine diet. It's really yummy, and you can add different ingredients to change it."

Ingredients:

  • 3 bananas – smashed

  • 1 ½ cups flour

  • 1/3 cup (or a little less) cinnamon applesauce

  • 3/4 cup sugar

  • 3/4 cup blueberries

  • 3 Tablespoons liquid egg whites

  • 1 teaspoon vanilla

  • 1 teaspoon baking soda

  • pinch non-iodized salt


Directions:

  1. Preheat oven to 350 degrees and grease a small cake pan. (I use an 11 inch x 8 inch pan.)

  2. Mix applesauce into mashed bananas.

  3. Mix in sugar, egg and vanilla.

  4. Sprinkle the baking soda and salt over the mixture and mix in.

  5. Add flour and mix well.

  6. Fold in blueberries and pour into greased pan.

  7. Bake 45-50 minutes, depending on the depth of the pan – until golden brown on top.

  8. You can substitute any kind of berries, and I've added walnuts, too.
