Baked Peaches

This sweet and easy peach dessert is a simple remedy to help you stay healthy and happy during and after the holidays. No need to skip dessert when you can make baked peaches—a satisfying treat that rounds out a perfect meal with friends and family. (Contributed by the Light of Life Foundation.)

When you’re trying to stay healthy, desserts are often the first to come off the list. With this simple, fruity favorite, you can have your sweets and enjoy them too. Baked peaches are an excellent alternative if you’re craving peach cobbler or homemade pie.


Ingredients:

  • Juice of a lime

  • ½ teaspoon of freshly ground nutmeg

  • 2 tablespoons of brown sugar

  • 1 oz or 2 tablespoons of walnut or almond oil

  • 1 oz chopped toasted nuts (hazelnuts, walnuts, pecans)

  • 4 ripe peaches halved and stone removed

Directions:

  1. Preheat oven to 375 degrees F

  2. Mix together lime juice, nutmeg, sugar, and oil

  3. Place peaches, cut side up, in baking dish so they fit snugly

  4. Divide the sugar mixture between the peach halves

  5. Bake 20 minutes until the syrup is bubbling and there are golden-brown flecks on the peaches

  6. Baste peaches occasionally with juices while cooking

  7. Sprinkle toasted nuts over peaches and serve warm
