Ingredients (2-3 Servings):

  • 1½ lb zucchini

  • 2 tbsp extra virgin olive oil

  • ¼ cup white wine vinegar

  • ¼ cup sugar

  • Pinch red pepper flakes

  • 4 garlic cloves, thinly sliced

  • 4 tbsp basil leaves, freshly chopped

  • 4 tbsp parsley leaves, freshly chopped

  1. Wash and dry zucchini.

  2. Cut lengthwise into slices ⅓-inch thick.

  3. Place zucchini slices in a colander; set aside to drain for 2 hours.

  4. In a large saucepan, heat the olive oil over medium heat.

  5. Place drained zucchini slices in pan and cook gently until golden brown on both sides (about 3 minutes per side), being careful not to burn the slices. Set aside.

  6. In another saucepan, bring vinegar and sugar to a boil over high heat. Add a pinch of pepper flakes.

  7. Place zucchini slices flat in a shallow bowl with garlic slices, basil, and parsley scattered throughout.

  8. Pour sweet-and-sour mixture over zucchini slices.

  9. Cover and let marinate for at least 24 hours before serving.

  10. May be served hot or cold.
